White pepper refers to the seed of the pepper plant alone, without the darker coloured outer skin of the pepper fruit. To accomplish this the fully ripe red pepper berries are soaked in water for about a week. The flesh of the pepper softens and decomposes. The outer covering is then removed by rubbing , and the naked seed is dried. The white pepper available with us in unpolished and not processed mechanically, thus retaining its natural flavour.
It has a slightly different flavour than black pepper and is commonly used in dishes like salad, light-coloured sauces or mashed potatoes. It is also one of the ingredients used in Chinese cooking.
