Known as Kaipuli in Coorg, bitter lime/orange is one of the citrus fruits widely available in Coorg and the most sought. Its tart flesh and the beguiling bitter-sweet fragrance is unforgetable. While you might not want to eat it out of hand, the flesh of the fruit is used in many a ways to create unique dishes. The juice, pulp or the fruit as a whole is used. Common preparations of kaipuli include chutney, pickle and fruit concentrate.
The chutney displayed here is made from the pulp of roasted kaipuli. Jaggery has been added to give it a slightly sweetish tinge, but the bitterness is what you would love. The slightly sour, mixed with a sweetish tinge does leave an everlasting impression on your taste buds.
This product is a home produce from a group of women in Coorg. The group is aptly named The Sprout, who aim to popularise the Flavor of Coorg.
